Like gourmet burgers, fancy fried chicken, bao buns and ramen noodles – waffles are a food trend that’s seen a vast increase in popularity in recent years. Forget the frozen potato kind and the over-sweetened “Belgian” waffles sold on every corner of Oxford Street, these up-to-the-minute waffles are generally served with savoury toppings alongside some more classic, understated sweet toppings.
Take Waffle Lion, for example, a new venture which will pop-up at The Common in Bethnal Green in September – a cafe with an architectural studio downstairs, blurring the boundaries between private office and public café. Initially launched with a week long pop-up at the Hay-on-Wye Literary Festival in mid-Wales, the menu for Waffle Lion’s first London pop-up will include waffles topped with the likes of slow roasted mutton shoulder with sticky pomegranate molasses, maple syrup yogurt, pomegranate seeds and fresh mint; and Ragstone goats cheese with caramelised onions and rocket, drizzled with maple syrup. A sweet dessert offering of a blackberry topped waffle with whipped cream and maple syrup will also be available.
Throughout the evening, waffles will be available from 6pm, paired with Prosecco, wine, spirits and local craft beer that’s all served up in a bright and lively communal space. No bookings are being taken, guests are encouraged to turn up on the evening.
