The Weekly Cocktail Recipe – Reverend JW Simpson’s ‘Southside Retox’

Perfect for Summer days, the Southside is a feel good mix of Rathbone New London Dry Gin, Agave Syrup, fresh Lemon Juice and The Reverend’s Detox Juice (Made with fresh Cucumber, Mint, Ginger & pressed Apples) then topped with Sparkling Wine for a light, bright & healthier-than-most long and refreshing sipper. Southside Retox

Ingredients

  • 50 ml Rathbone New London Dry Gin
  • 20 ml Detox Mix (recipe below)
  • 20 ml Agave Water
  • 20 ml Fresh Lemon Juice
  • Top Sparkling Wine

For the Detox mix (makes 1 litre) blend: 

  • 1 Cucumber
  • 4 Whole Mint Stalks
  • 1 Thumb Ginger (Finely Diced)
  • 6 Whole Seasonal Apples

To Garnish:

  • Mint
  • Lime
  • Cucumber

Instructions

  • Shake all but Fizz with ice and strain into a highball glass.
  • Fill with cubed Ice and top with Fizz.
