The Weekly Cocktail Recipe – MOMMI’s ‘Pachamama’

Having recently opened in Clapham, MOMMI is a Japanese-Latin Raw Bar + Grill situated on the High Street. Not only do they deliver a sophisticated element of style with their inventive cuisine, their Cocktail list is also very strong. Created by head mixologist Andrew Houliston, the list includes the ‘Pachamama’, which features Rum and Velvet Felurnum. Follow the recipe below in order to make the drink at home, this weekend.

Ingredients

40ml Dark Rum

15ml Velvet Felurnum

15ml Passion fruit Puree (or scoop out one whole passion fruit)

25ml Fresh Lime Juice

20ml Sugar Syrup

5ml Physalis puree (or one muddled fresh physalis)

2 Dashes of Angustora Bitters

To Garnish

Blood orange twist and 1 fresh physalis

Method

1. Add all the ingredients into a Tiki Mug (or tall glass if you don’t have a Tiki Mug).

2. Fill the glass 3⁄4 full of crushed ice and stir vigorously to dilute the drink.

3. Add the straws and fill the glass to the top with crushed ice.

4. Place the Blood Orange twist and one fresh Physalis.
