It would also be a total hit for a special Father’s Day brunch. This particular quiche just has some very simple, basic ingredients, so that even the pickiest eaters will enjoy it. No mushrooms, peppers or spinach for the young cowboys around the table. Just bully beef, eggs, onion and cheese. Packed with wholesome goodness!

To save some time, you could assemble this easy quiche the night before you plan to bake it. Just make sure you cover it tightly with some plastic wrap or aluminium foil and chill in the fridge. Then pop it straight from the fridge into the oven while you brew some strong Cowboy-style coffee for your morning kick!

Ingredients

CRUST

  • 1 cup flour
  • 1 cup cheese, grated
  • 125 ml melted butter
  • 5 ml paprika

FILLING

  • 5 ml butter
  • 1 onion, chopped
  • 1 tin bully beef (corned beef) cut into cubes
  • 1 tsp mixed herbs
  • salt & pepper to taste

TOPPING

  • 6 eggs
  • 125 ml cream
  • 1 tsp wholegrain mustard
  • 1 cup cheese, grated

Instructions

  • Mix the crust ingredients together
  • In a greased pie dish, evenly spread the crust in the base
  • In a saucepan, heat the butter
  • Fry the onions and add the bully beef, then season
  • Spread evenly over the crust
  • Mix the eggs, cream and mustard
  • Pour over the filling
  • Sprinkle the cheese over the top
  • Bake for 30 minutes at a preheated oven at 180 °C
